500g chicken breast 1/4C soy sauce
500g chicken thighs 3 cloves crushed garlic
1 lemon, juiced 2 yellow onions, cut to 1-in pieces
1/4C olive oil 2 green bell peppers, cut to 1-in 1t dried oregano pieces
In a large bowl, mix together lemon juice, olive oil, soy sauce, oregano and garlic. Add the chicken pieces, onions and peppers. Stir to coat and marinate. Refrigerate for 2-3 hours. (I refrigerated mine for half a day).
Soak wooden skewers in water while waiting for the meat to finish the marination process.
Skewer meat as desired. (I alternately skewered mine: thigh – bell pepper – breast – onion – thigh – bell peper – breast).
Grill until meat is caramelized in color, about 5 to 8 minutes per side, depending on the heat of your charcoal grill. Do not overcook.
